Recipe – Cinnamon & apple sauce muffins


Makes 16 muffins


For the apple sauce:

  • 4 medium sized gala apples (you can use any apples, I just had some galas that needed using up)
  • 1 tablespoon of demerara sugar
  • Juice of 1/2 a lemon
  • 6 tablespoons of water

For the muffins:

  • 400g self raising flour
  • 175g light brown sugar
  • 250ml semi-skimmed milk
  • 125ml vegetable oil
  • 2 medium eggs
  • 2 teaspoons ground cinnamon
  • 12 hole muffin tin
  • 2 teaspoons demerara sugar
  • Honey

For the muffin cases:

  • Baking paper
  • Ruler
  • Scissors
  • Pencil
  • A small jar or can – the diameter needs to be the same as the bottom of your muffin tin hole (I used a small English mustard jar)


Pre-heat your oven to 200°c (180°c if you have a fan oven)

Start by making your apple sauce. Peel, core & dice your apples, and put them in a saucepan over a medium heat with a tablespoon of brown sugar, lemon juice and water. Cook until the apple is soft (about 20 mins) and squash any large chunks so that you don’t have too many big lumps. Set the apple sauce to one side to cool slightly

Prepare your muffin cases ahead of your batter so you can spoon it straight in. Measure and cut your baking paper into 5 inch squares. Mold each square over the bottom of your jar and place in your muffin tray

For your muffin mixture, crack your eggs into a large mixing bowl and gently beat for about a minute. Add in your vegetable oil and milk, and whisk until combined. Whisk in the sugar, again until combined with the other ingredients. At this stage your mixture will be really wet, but don’t worry, that’s exactly what you want. Sift in your flour and cinnamon and gently mix until until you have a smooth batter with no lumps

Add about a heaped tablespoon of muffin mixture into each case so they’re approximately 1/3 full. On top of that, add a teaspoon full of your apple puree, then cover with another spoonful of your muffin batter

Bake for 20-25 minutes, until the tops of your muffins are golden and a skewer comes out clean when inserted into the centre. Drizzle a little honey onto each muffin & sprinkle with demerara sugar

Allow the muffins to cool – you don’t want to burn your mouth on hot apple sauce! – and enjoy!
